Jean-Yves Bouguet's MATLAB Calibration Software
MatlabBGL David Gleich's MATLAB Graph Library. This fills a big hole in the MATLAB standard packages.
VLFeat by Andrea Vedaldi and Brian Fulkerson is a excellent library of vision algorithms. Here you will find SIFT, MSER, k-means and more. All beautifully documented.
Piotr's Image & Video Toolbox for Matlab maintained by Piotr Dollar and Vincent Rabaud. Well documented functions for filtering, clustering, classifying and more.
Peter Corke's Machine Vision Toolbox he also has a well regarded Robotics Toolbox.
